Pasta Salad
serves 4
Ingredients
- 2 C fresh snow peas, boiled 1 minute
- 2 C broccoli flowerets, boiled 1 minute
- 2 1/2 C cherry tomato halves
- 2 C mushrooms
- 8 oz whole pitted ripe olives
- 8 oz cheese stuffed tortellini. cooked
- 1 T grated parmesan cheese
- 1/3 C red wine vinegar
- 1/2 C olive oil
- 1/2 C sliced green onions
- 2 T chopped fresh parsley
- 2 cl garlic, minced
- 2 t dried basil
- 1 t dried dill weed
- 1/2 t sugar
- 1/2 t dried oregano
- 2 T Dijon mustard
Instructions
- Whisk together the vinegar and olive oil, then mix in the green onions, parsley, garlic, basil, dill, sugar, oregano, and mustard. Season to taste.
- Toss with the vegetables, pasta, and cheese.
- Chill several hours before serving. Garnish with additional parmesan if desired.
